Guinness Bacon Brownies

1lb cooked chopped bacon

2 boxes of Double Chocolate Brownie Mix

2 eggs

⅔ cup Guinness Stout

⅔ cup oil

227g softened butter

2 cups icing sugar

Method.

Method

Step 1:  Lightly beat the eggs in a large bowl, add the Guinness and oil, and stir.

Step 2: Add the brownie mix and stir until combined.

Step 3: Add the bacon bits and stir until combined.

Step 4: Grease a large casserole dish (or any oven-proof dish that is large enough). Pour the mixture in and bake for 60-70 minutes. You can check when its ready by inserting a cocktail stick into the middle until it comes out clean.

Step 5: For the icing, add the icing sugar and butter into a bowl and mix until it becomes a nice not too thick and not too runny consistency. (Add 2-4 tablespoons of Guinness for even more stout flavour)

Once the brownies are cooked and cooled, frost the brownies with the icing and sprinkle with the remaining bacon bits.
