Ingredients
200g bacon lardon (thick bacon rasher cut into strips)
400g Spaghetti
1 Teaspoon Olive Oil
2 Large Carrots (finely diced)
3 Celery Sticks, (finely diced)
190g sundried tomato pesto
8-12 basil leaves shredded (or a teaspoon of jar basil)
Method
STEP 1
Boil the spaghetti 8-10 minutes, while the spaghetti cooks, heat the oil in a pan, add the carrots, celery, bacon and stir well. Cover the pan and cook for 10 minutes until the veg has softened, stir occasionally.
STEP 2
Drain the spaghetti, and add the pesto to the pan, mixing in the spaghetti, warm through and add the basil.
