450g (1lb) Minced Beef (use extra lean as the bacon adds additional fat)
6 slices uncooked bacon, chopped finely either by hand or in a food processor
4 slices cooked bacon, crispy
Salt and pepper
2 tsp vegetable oil
Mayonnaise
Tomato ketchup
Cheese slices
Lettuce
Tomato, sliced
4 Bread buns
1) Mix the minced beef, bacon, salt and pepper by hand, until everything is combined. Try not to overwork the mince.
2) Split the mixture into 4 even parts, and shape into burgers. Depress the middle of each burger slightly with your thumb to help keep it flatter when cooked.
3) Preheat a large frying pan on a medium heat, add the oil to coat the pan lightly. Cook the burgers for approx. 4-5 minutes on each side, or until cooked through.
4) Toast your breadcakes (if preferred) and build your burger. Add mayo to the bottom bun, then lettuce, top with the burger, slice of cheese, and bacon. Top with ketchup and then the top bun. Enjoy!
