Bacon and onion pizza

Smokey bacon is the star of this pizza. With the sweetness of caramelised onions, this is sure to be a crowd pleaser. Making pizzas at home is fun and saves you money. You can buy ready-made dough or make your own. Or alternatively, just add some toppings to your favourite shop-bought Margherita.

Ingredients.

You will Need:

1 quantity of homemade pizza dough, or shop-bought ready to roll pizza dough

Pizza topping

250g Grated mozzarella

200g Premium smoked back bacon, cut into 1” pieces

1 large onion, halved and thinly sliced

 

A simple homemade pizza dough recipe (makes 3 medium pizzas or 4 small)

400g strong bread white flour

100g fine polenta (or 100g additional bread flour)

7g instant dried yeast

1.5 tsp sea salt

1.5 tsp caster sugar

~325ml tepid water

1tbsp extra virgin olive oil + a little extra to oil bowl

 

Method.

1) Combine the yeast and water in a jug and leave for 5 minutes. Then add the 1tbsp oil.

2) On a clean surface, pile the flour and make a well.

3) Gradually add the liquid whilst bringing in the flour from the edges to be mixed. When all combined, knead the dough for 10 minutes, or until the dough becomes smooth and elastic.)

The poke test – gently prod the dough with your finger. If the indent stays, keep kneading. If it springs back, it’s ready.

Using a mixer:

1) Add the yeast and the water to the mixing bowl. Leave for 5 minutes to activate – it should start to bubble.

2) Measure the flour, polenta (if using), salt and sugar in a bowl and mix all the dry ingredients.

3) After 5 minutes, add the 1tbsp oil and the flour mix to the bowl, and mix on low speed using a dough hook for 8-10 minutes.)

 

4) Lightly oil a large bowl. Place the dough in the bowl and cover with a clean tea towel. Leave the dough to prove until doubled in size.

5) While the dough is proving, fry your bacon on a med-high heat, until cooked but not crispy (it will cook more on the pizza). Remove with a slotted spoon and place on a plate lined with kitchen towel.

6) Lower the heat to medium and add the onion to the frying pan and fry for 10-12 minutes, stirring regularly until caramelised. If using a pizza stone, place in the middle shelf of the oven. Preheat your oven to high ~240 C/460 F/Gas mark 7.

7) When ready, remove the dough from the bowl onto a lightly floured surface. Split the dough into 3 or 4 pieces. Form each into a ball. Roll out the pizza dough.

8) Top with the grated mozzarella, then the cooked bacon and onions.

9) Transfer the pizza to the oven using a pizza peel or flat tray and cook for ~8minutes until the cheese is melted and the base is fully cooked.

Recipe Tip

Polenta makes a lovely flavoured and slightly chewy pizza base, for an authentic taste. Sprinkled on the tray/pizza peel it also stops the dough sticking so makes it easy to slide the uncooked pizza into the oven.
