You will need:
4 slices thick cut bacon
4 boneless skinless chicken breasts (about 1 3/4 lbs.)
2 tsp. ranch seasoning (can be homemade see below)
1 1/2 cup grated mozzarella
Rock salt
Freshly ground black pepper
Chopped chives, for garnish (1tsp of jar chives is fine)
Homemade Ranch
The ranch is really easy to make at home,
2 tablespoons dried parsley
2 teaspoons dried dill
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons dried onion flakes
1 teaspoon ground black pepper
1 teaspoon dried chives
1 teaspoon fine sea salt
1/3 cup buttermilk powder
METHOD
STEP 1
Whisk all ingredients together until blended. If you want a more finely-ground seasoning mix, you can pulse the mixture in a food processor until it reaches your desired consistency.
STEP 2
Combine 1 tablespoon ranch seasoning mix + 1/3 cup mayo + 1/3 cup milk and whisk to combine.
METHOD
Step 1
In a large frying pan, over medium heat, cook bacon, flipping once, until crispy, about 8 minutes. Transfer to a paper towel–lined plate. Drain all but 2 tablespoons of bacon fat from the pan.
Step 2
Season chicken with salt and pepper. Return to pan on a medium-high heat, add chicken, and cook until golden and just cooked through, about 6 minutes per side.
Step 3
Reduce heat to medium and sprinkle chicken with ranch seasoning and top with mozzarella. Cover the frying pan and cook, until cheese is melted and bubbly, about 5 minutes.
Step 4
Crumble and sprinkle bacon and chives on top before serving.
