Ingredients:
Oil
2 gammon steaks
2 eggs
2 handfuls of watercress to serve
SALSA
150g pineapple diced.
1 red chilli finely chopped.
1/2 small red onion finely diced.
a handful parsley chopped.
1 lime juice
STEP 1
Mix the salsa ingredients and season. Heat a griddle to high. Oil the gammon then season with pepper and grill for a few minutes on each side until cooked through. Fry the eggs in a small frying pan.
Place cooked gammon on a plate and add the egg and pineapple on top and parsley to garnish.
