Serves: 8-10 Cook Time: 2 hours
Ingredients:
1.36kg (3lb) Slipper Joint (or Ham Joint)
1 dry bay leaves 3g (jar bay leaves are fine too)
1 Tablespoon of ground Black Peppercorn
1 tablespoon of finely chopped onion
2 tablespoons whole cloves (jar cloves are fine)
1 teaspoon cinnamon
2 tablespoons maple syrup
1 tablespoons demerara sugar
Ingredients
STEP 1
Place the joint in a large bowl, cover it with cold water and soak it overnight or for a minimum of 3-4 hours.
STEP 2
After soaking, wash the joint well in cold water and place it in a saucepan with the Bay leaf, peppercorn, onion and enough cold water to cover the joint.
Bring to the boil then reduce the heat, cover the pan and simmer gently for 80 minutes (20 minutes per pound, plus 20 minutes).
STEP 3
Pre-heat the oven to 220C, 425F, gas mark 7
STEP 4
Remove the rind from the joint (if it hasn’t already been removed) and score the exposed fat with a sharp knife to resemble a diamond pattern.
Rub clove onto each of the diamonds then place the joint in a roasting tin. Mix the cinnamon, maple syrup and sugar together and spread over the joint.
Bake for 20-25 minutes, baste frequently with the glaze until crisp and golden.
