Gammon with Spinach and Mushrooms

Ingredients:

Frying Oil

2 Shallots (sliced)

1 Clove Garlic crushed (1 teaspoon jar garlic is fine)

150g Chestnut Mushrooms (finely sliced)

200g Baby Spinach (chopped)

2 teaspoons Mustard

3 tablespoons Crème Fraiche (Sour Cream)

2 Gammon Steaks

2 Eggs

Method:

Step 1: Heat the oil in a frying pan, and cook the shallots for 3-4 minutes, until soft. Add the garlic and mushrooms and cook for around 8-10 minutes or until golden and most of the liquid has evaporated. Mix in the spinach and cook until the spinach looks “droopy.” Stir in the mustard and cream until bubbling. Remove from pan and save in a bowl.

Step 2:

Rub some oil onto the gammon steaks and cook for 2-3 minutes on each side, until the gammon is cooked through.

Step 3: Once the Gammon is cooked remove from the pan and place onto a plate. Fry the eggs in the pan using the same oil to add flavour.

Spoon the spinach and mushrooms onto a plate and add the gammon and eggs on top.
