Ingredients.

You will Need:

1.5kg (3.3lb) Slipper Joint (or Ham Joint)

100g (½ cup) brown sugar

120ml (½ cup) honey

60ml (¼ cup) orange marmalade

Method.

Step 1: First check that your joint will fit in your air fryer basket (larger joints may not). Place the joint in a large bowl, cover it with cold water, and leave it to soak for a minimum of 3-4hrs, or overnight.

Step 2: Preheat air fryer for 5mins 170C.

Step 3: Wrap the presoaked joint in foil and place it in the preheated air fryer tray. Use mitts when lifting in and out to avoid burns. For a 1.5kg joint, cook for 45mins (15mins per 500g).

Step 4: During the last 5mins, add the glaze ingredients to a small saucepan and gently simmer over a low heat for a few minutes until the sugar is dissolved.

Step 5: Remove the joint from the air fryer, open the foil. Remove the rind (if present) and score the fat in a diamond pattern with a sharp knife.

Step 6: Spread the glaze over the joint and cook uncovered by the foil for 15-20mins@180C. Check regularly, if any areas browning quickly, you can cover these with the foil again. Cook until the internal temperature at the centre of the meat reaches 65C, remove and let it rest for 10-15mins, then carve.
